Chances of setting off a fire alarm is a little high due to the searing of the scallops. The key is to getting the pan very hot and then moving quick to get the oil in the pan, followed quickly by the scallops.
Ingredients
Yield: 4 servings
1 to 1 ½ pounds of scallops
1 bunch of italian parsely
8 cloves of garlic
1 lemon
10 tablespoons of unsalted butter, room temperature
Salt
Olive oil
Bread for serving
Directions
Prepare the butter
Step One
If it isn't already soft, cut the butter into smaller pieces and set at room temperature.
Step Two
Pick the leaves off 1 bunch of parsely and finely chop, add this to a mixing bowl.
Step Three
Over the mixing bowl with the parsely, finely grate the 8 cloves of garlic and zest of 1 lemon. Give the bowl a quick mix.
Step Four
Add the soft butter and a big pinch of salt to the bowl. Mix the bowl well to combine the ingredients. Set this aside for later.
Prepare scallops
Step Five
Position a rack in the top of your oven. Preheat the broiler (high). Pat scallops dry and sprinkle all over with salt.
Step Six
Heat up a large skillet on medium-high to high. Add enough oil to the pan that the skillet is coated. Once the oil is hot (I waited to just before smoking), add the scallops in a single layer, watch out for splattering oil.
Cook the scallops, undisturbed, until you can see a deep golden crust (about 3 minutes). This is scary as some smoke might appear, feel free to lift the pan and move the oil around but don't lift the scallops!
Step Seven
Turn off the heat and momentarily, transfer the scallops to a plate, seared-side up. Remove any remaining oil from the skillet.
Add the scallops back to the skillet, seared-side up and arranged in a single layer. Add a dollop or good amount of your butter mixture to the top of each scallop (about ½ tablespoon on each).
Step Eight
Place the skillet of scallops under the broiler and broil until the butter melts and the scallops firmed up a bit.
Serve with bread and as much squeezed lemon as you'd like.
